I posted this recipe last year in the earlier days of our blog, but wanted to re-post because this winter has been incredibly brutal for my family and almost everyone I know. With the flu epidemic this year more prevalent than ever and freezing temperatures across the country, why not re-post?

I began juicing two years ago after I was diagnosed with a life changing autoimmune disease. I felt terrible, run down, and my mind felt clouded all the time. On my own accord, I began to research the benefits of juicing certain foods for wellness and thought, “What do I have to lose?” I was skeptical about taking medicine after medicine and steroids galore. Those did help subside some of the pain from my autoimmune, but still left me with no energy and drive. Thus, began my journey into juicing.

So here we are a couple of years later, and after hours of sleepless research on what nutrients do what for the body and countless trials and errors, I am excited to share with you what I found. This juice in particular helps me when I am overly tired and feel like my immune system needs a good kick in the pants. 

​Reasons to love this juice and make it a staple:
​Beets are very high in vitamin C, a key immune system booster. They also contain fiber, potassium, manganese, and vitamin B folate. Beets are proven to provide the nutrients needed for a healthy nervous and muscular system, as well as, provide a boost in nutrition for your bones, liver, kidneys, and pancreas. Each of the different colors provide a different immune boosting nutrient the body can absorb – from vitamin A to lutein, and cancer fighting lycopene. So why not add a little color?

Ginger is one of the world’s healthiest foods. It helps soothe your stomach, boost your immune system, fight nausea, and reduce inflammation.

There is a reason the old saying, “An apple a day keeps the doctor away” exists. Apples are high in the antioxidants your body needs. New research shows the darker the skin of the apple the better. Also, when possible, be sure to use only organic apples. Non-organic apples contain more pesticides and toxins than any other fruit or vegetable on the market. Ingredients:

  1. Two organic apples. The darker the red the better. 
  2. Five beets. I prefer beets that are already peeled and steamed (found at most grocery stores in the produce section). I prefer the taste of these to raw. Just a personal preference, but you can use raw also.
  3. Four to six rainbow carrots. I leave the skin on, but make sure to wash thoroughly.
  4. Ginger. Add your preference. You can use raw or a ginger paste. I find that the ginger paste blends easier so I just add a tablespoon.

Throw all the ingredients into your juicer and enjoy with ice. This drink will froth a bit. You can drink it or skim the top. ​
