4 EASY MEALS FOR A COZY VALENTINE’S NIGHT IN
Last week I posted a Gift Guide for Valentine’s Day. In that post, I wrote about how my husband and I like a quiet night in together. It seems like we never get down time between two very busy jobs, side hustles, and kids. With all of that, a night in making a great meal together while reconnecting seems perfect.
For this post, I decided to round up a few recipes from my favorite food blogs/sites. I also listed recipes that are inclusive to all lifestyles. From a meat heavy skirt steak with roasted veggies to gluten-free, vegetarian, and a vegan option everyone can find a recipe that applies to them.
So, what were the criteria for these recipes? Well a couple I’ve made, but beyond that they all have great reviews, consist of simple ingredients, and are easy to make.
A Simple Seafood Dish Not Simple on Taste
Shrimp sauteed in a creamy rich feta-tomato sauce makes this dish an ideal date night dinner. It is easy to make with simple ingredients but full of flavor. It can work as a special occasion dinner or as a Sunday staple you can whip up to have a great meal with friends and family.
The Classic Steak Dinner
I love this recipe for “Cowboy Steak” because it is made in cast iron skillet in lieu of a grill. Living in the Mid Atlantic makes grilling in February challenging. So I’ve taken to making steak in a cast iron skillet in colder months. I honestly only make red meat for special occasions or when I find a great recipe, and this is one. The recipe is easy and consists of a warm and smoky coffee rub.
A Sweet and Savory Vegetarian Standard
With leeks, potatoes, goat cheese, and a crispy pistachio crust, this galette is sure to be loved by everyone. With a complete breakdown of how to make the dough, this could be a great activity to do together as a couple for a cozy night in.
Everyday Vegan Risotto
The Minimalist Baker is one of my favorite food blogs and has been for a couple of years now. All recipes are plant-based, take 30 minutes or less, use only one bowl, and have no more than 10 ingredients.
I’ve written before about how I like to eat vegan/ vegetarian on week days. I am excited to try this dish not just for Valentine’s but for every day. This mushroom risotto recipe uses vegan butter and adds a recipe to make vegan Parmesan at home. Full disclosure I have made the vegan Parmesan and it actually is very tasty.
